Ingredients
  

Pasta and Base Ingredients

  • 8 oz Pasta (rotini or shell) Choose pasta that catches dressing and juices.
  • 1 lb Ground Beef Can substitute with ground turkey or chicken.
  • 1 packet Taco Seasoning Feel free to make your own blend.

Vegetables and Add-ins

  • 1 cup Cherry Tomatoes, halved Adds sweetness and freshness.
  • 1 cup Corn Use fresh or frozen.
  • 1 cup Black Beans, rinsed and drained Protein-packed addition.
  • 1 cup Shredded Cheese Cheddar or Mexican blend recommended.
  • 1 cup Crushed Doritos Provides crunchy texture.
  • 1/4 cup Diced Bell Peppers Add color and crunch.

Dressing

  • 1/2 cup Ranch Dressing Can use a lighter version.
  • 1/4 cup Salsa Mild or spicy based on preference.

Seasoning

  • to taste Salt and Pepper Essential for flavor enhancement.

Instructions
 

Preparation

  • Boil a large pot of salted water. Add the pasta and cook until al dente. Drain and let cool.
  • In a skillet over medium heat, brown the ground beef. Drain off excess fat and stir in taco seasoning with a splash of water. Simmer for 5 minutes.

Mixing

  • In a large bowl, combine the cooled pasta, seasoned beef, cherry tomatoes, corn, black beans, shredded cheese, and bell peppers. Stir gently.
  • In a separate bowl, whisk together ranch dressing and salsa. Pour over pasta mixture and toss gently to coat.
  • Season with salt and pepper to taste.

Serving

  • Serve immediately or refrigerate for one hour to enhance flavors.

Notes

Enhance flavor with jalapeƱos or hot sauce. Store leftovers in an airtight container for up to three days.
