  • 1 cup fresh pineapple, cut into bite-sized chunks Fresh is best, but canned will work if drained well.

For the glaze

  • 1/2 cup brown sugar Can be substituted with coconut sugar for a different flavor.
  • 1/4 cup soy sauce Low-sodium soy sauce can be used for a balanced flavor.
  • 1 tablespoon Dijon mustard Adds a hint of tang.
  • 1 teaspoon garlic powder For added warmth and depth.
  • 1 teaspoon ground ginger Fresh ginger can be used as a substitute.
  • Wooden or metal skewers Soak wooden skewers for 20-30 minutes before use.

Preparation

  • Soak wooden skewers in water for 20-30 minutes if you're using them.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil.
  • In a bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and ground ginger to create the glaze.
  • Assemble the skewers by threading the cocktail sausages and pineapple alternately.

Cooking

  • Place the skewers on the baking sheet and brush them generously with the glaze.
  • Bake for 20-25 minutes, turning halfway through and brushing with more glaze.
  • Broil for 1-2 minutes at the end to achieve a charred finish.
  • Serve warm on a platter.

Notes

For best presentation, serve with fresh herbs and consider offering a dipping sauce. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently in the oven for optimal texture.
