Ingredients
  

For the dip

  • 2 cups Sweet Corn (fresh, frozen, or canned) Grilled or roasted for smoky flavor if fresh.
  • 8 oz Cream Cheese For a lighter version, substitute with Greek yogurt.
  • 1 cup Sour Cream Can be swapped with Greek yogurt.
  • 1 cup Cotija Cheese Queso Fresco is a good alternative.
  • 1/4 cup Fresh Cilantro Green onions or parsley can be used instead.
  • 2 tbsp Lime Juice Freshly squeezed for best flavor.
  • 1 tsp Chili Powder Toast before adding for enhanced flavor.
  • 1 tsp Cumin Toast before adding for enhanced flavor.

Preparation

  • Grill or roast the corn for about 10-15 minutes, turning occasionally until slightly charred.
  • In a mixing bowl, combine cream cheese, sour cream, and lime juice. Whisk until smooth and creamy.
  • Fold in the grilled corn, fresh cilantro, and Cotija cheese.
  • Stir in the chili powder and cumin to deepen the flavors.
  • Taste your dip and adjust seasoning with more lime or salt as needed.
  • Chill the dip in the refrigerator for at least 30 minutes.

Serving

  • Serve the dip with crunchy tortilla chips or fresh veggie sticks.

Notes

For an extra kick, top with jalapeƱo slices. Leftovers can be stored in an airtight container for 3-5 days or frozen in single portions.
