  • 1 bunch Cilantro Substitute with parsley if desired.
  • 1 piece Avocado Use a ripe but not overripe avocado.
  • 1 cup Rice Any variety, such as white, brown, or quinoa.
  • 2 tablespoons Olive Oil Opt for good quality olive oil.

Instructions
 

Marination

  • In a medium bowl, whisk together lime juice, honey, and a pinch of salt.
  • Add the chicken breasts, ensuring they’re fully coated.
  • Cover the bowl and let it marinate in the fridge for at least 15 minutes.

Cooking

  • Prepare your choice of rice according to the package directions.
  • Stir in a splash of lime juice and chopped cilantro once the rice is fluffy.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear the marinated chicken for about 6-7 minutes on each side until cooked through.
  • Let the chicken rest for a few minutes before slicing.

Assembly

  • On a plate, start with a base of the cilantro-lime rice.
  • Layer the slices of chicken on top, then finish with chunks of avocado.
  • Drizzle with lime juice or a touch more honey and serve warm.
