  • 2 tbsp Olive Oil Essential for toasting flavors.
  • 1.5 cups Long-Grain White Rice Brown rice can be used.
  • 3 cups Chicken Broth or Water Broth adds depth of flavor.
  • 1 cup Barbecue Sauce Choose your favorite brand.
  • 0.5 cup Honey Can substitute with maple syrup.
  • 1 medium Onion Can experiment with different types.
  • 3 cloves Garlic Fresh minced garlic is preferred.

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Sear the chicken thighs until golden brown on both sides, about 5-7 minutes; set aside.
  • Sauté the onion until soft, then add garlic and cook for another minute.
  • Stir in the rice and let toast for a minute.
  • Nestle the chicken back in and add broth, barbecue sauce, and honey.
  • Bring to a boil, lower heat, cover, and simmer for 20-25 minutes until rice is tender.
  • Fluff rice before serving.

Notes

Leftovers can be stored in the fridge for up to 3 days. For best reheating results, use a skillet with some broth. Can freeze for up to 3 months.
