  • 1 cup Black Beans Rinsed and drained for fiber and protein.
  • 1 cup Corn Frozen or canned adds sweetness.
  • 1 cup Shredded Cheese (Cheddar or mozzarella) Choose your favorite cheese for melting.
  • 1 cup Chicken or Vegetable Broth Use low-sodium for a healthier option.

Cooking Instructions

  • In a large pan, heat a drizzle of olive oil over medium heat. Add the ground turkey or beef and sauté for about 5-7 minutes until it's browned. Drain any excess fat.
  • Toss in the taco seasoning, diced tomatoes (with their juices), black beans, corn, and the uncooked pasta. Stir everything together.
  • Pour in the broth and stir well. Bring the mixture to a boil.
  • Reduce to a simmer and cover the pan. Cook for about 15-20 minutes, stirring occasionally, until the pasta is tender.
  • Mix in the shredded cheese until melted and gooey. Season with salt and pepper to your liking.
  • Serve hot, topped with chopped cilantro if desired.

Notes

Pair this dish with a side salad or tortilla chips for a complete meal. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave or on the stove with a splash of broth.
