  • 0.25 cup pineapple juice Use juice from pineapple chunks.
  • 3 tbsp honey Maple syrup can be used for vegan options.
  • 2 tbsp rice vinegar Can be swapped for apple cider vinegar.
  • 1 tbsp cornstarch mixed with 2 tbsp water Optional for thickening the sauce.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment or lightly grease it.
  • Arrange chicken, bell peppers, onion, and pineapple on the sheet pan, ensuring they have space and are not crowded.
  • Drizzle with olive oil and sprinkle with garlic, salt, pepper, paprika, and chili flakes. Toss everything together gently.

Cooking

  • Bake for 20-25 minutes, flipping halfway, until the chicken reaches 165°F (74°C) and the veggies look tender and slightly caramelized.
  • While baking, whisk soy sauce, pineapple juice, honey, and rice vinegar in a saucepan over medium heat.
  • Let the mixture simmer for 3-4 minutes and add the cornstarch slurry for thickness if desired.
  • Drizzle the sauce over the cooked chicken and veggies, tossing to coat.
  • Serve over jasmine rice or a bed of greens, garnishing with fresh herbs if desired.

Notes

For best flavor, marinate chicken ahead of time. Pair with coconut rice or a fresh green salad.
