Cooking Instructions

  • Melt the butter and olive oil in a large pot over medium heat.
  • Add sliced onions and caramelize for 20-25 minutes until deep golden brown.
  • Stir in thyme, salt, and pepper.
  • Add rice and toast for 2-3 minutes.
  • Pour in beef broth, bring to a boil, reduce heat, cover, and simmer for 18-20 minutes.
  • Stir in Gruyère cheese until melted and creamy.
  • Taste and adjust seasoning as needed. Serve warm.

Notes

For best results, allow onions to caramelize slowly for maximum flavor. This dish can also be made ahead of time and reheated. Pair with a green salad for a complete meal.
