Ingredients
  

Protein

  • 4 pieces Chicken thighs or other protein of choice (beef, tofu, chickpeas) Choose your preferred protein; chicken thighs are recommended for juiciness.

Aromatics

  • 1 medium Onion, finely chopped Sweet and aromatic onions are your base.
  • 4 cloves Garlic, minced Fresh garlic adds depth.
  • 1 tablespoon Fresh ginger, grated Adds warmth and flavor.

Spices

  • 1 teaspoon Cumin Toasted for enhanced flavor.
  • 1 teaspoon Paprika Complementary spice for warmth.
  • 1 teaspoon Chili powder For a little heat.

Liquid

  • 2 cups Stock, broth, or coconut milk Coconut milk adds creaminess and sweetness.

Vegetables

  • 1 cup Bell peppers, chopped Optional; feel free to switch up with zucchini or green beans.
  • 1 cup Carrots, sliced Adds vibrancy.
  • 1 cup Peas For sweetness and texture.

Herbs

  • 1/4 cup Fresh cilantro, chopped For garnishing.
  • 1/4 cup Fresh parsley, chopped For garnishing.

Instructions
 

Sauté Aromatics

  • Heat a couple of tablespoons of oil in a large pot over medium heat.
  • Toss in your chopped onions, minced garlic, and grated ginger. Sauté for about 3-4 minutes until fragrant.

Brown the Protein

  • Add your choice of protein into the pot and let it brown on all sides for about 5-7 minutes.

Add Spices

  • Sprinkle in cumin, paprika, and chili powder. Stir for about a minute.

Pour in the Liquid

  • Pour in your stock, broth, or coconut milk, and let it come to a simmer.
  • Adjust the heat to low and let it simmer gently for about 20 minutes.

Add the Veggies

  • Toss in the bell peppers, carrots, and peas. Cover and cook for another 10-15 minutes until the veggies are tender.

Finish with Herbs

  • Stir in chopped cilantro and parsley just before serving.

Notes

This dish stores well for 3-4 days in the fridge. Reheat gently on the stove, adding a splash of water if necessary. Can also be frozen for up to 2-3 months.
