Preparation

  • Place chicken breasts at the bottom of the crockpot.
  • Drizzle the melted garlic butter generously over the chicken breasts.
  • Toss the mixed vegetables over the chicken.
  • Sprinkle the Italian seasoning along with salt and pepper.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Garnish with freshly chopped parsley before serving.

Notes

For leftover storage, keep in an airtight container in the fridge for 3-4 days or freeze for 2-3 months. Reheat in the microwave or on the stove, adding a splash of chicken broth if needed.
