  • 2 medium zucchinis Fresh from the market, look for firm, unblemished zucchinis.
  • 1 cup all-purpose flour (or gluten-free flour) Base for crunch; gluten-free option available.
  • 1 cup Panko breadcrumbs Light and airy for a perfect crispy coating.
  • 2 large eggs Used for binding the flour and breadcrumbs.
  • to taste Salt
  • to taste Pepper
  • to taste Garlic powder
  • as needed Oil for frying Use high-smoke point oil like vegetable or canola oil.

Preparation

  • Slice zucchinis into 1/4-inch rounds.
  • In a mixing bowl, combine flour, salt, and garlic powder.
  • In another bowl, beat the eggs.
  • In a third bowl, pour in Panko breadcrumbs.

Frying

  • Dredge each zucchini slice in the flour mixture, then the egg, followed by breadcrumbs.
  • Heat oil in a skillet over medium heat.
  • Fry zucchini slices for 3-4 minutes on each side until golden brown.
  • Place on paper towels to drain excess oil and sprinkle with salt.

Notes

Serve hot with marinara or tzatziki sauce. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or a quick fry in oil.
