  • 1 medium onion Chop finely.
  • 1 bell pepper Mix colors for variety; red or yellow work well.
  • 3 cloves garlic Use freshly minced for best flavor.
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning Adjust for spice preference.
  • 1 tsp paprika Smoked paprika enhances flavor.
  • Salt and pepper to taste
  • 1 cup Parmesan cheese, grated
  • 2 tbsp olive oil

Cooking Process

  • Warm olive oil in a large pot over medium-high heat until shimmering.
  • Add sliced sausage, chopped onion, and diced bell pepper; sauté until browned (about 5-7 minutes).
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Pour in diced tomatoes (with juices), chicken broth, and heavy cream. Add Cajun seasoning, paprika, salt, and pepper; bring to a gentle boil.
  • Stir in uncooked penne; cover and simmer for 10-12 minutes, stirring occasionally.
  • Once pasta is tender and sauce is thickened, remove from heat and stir in grated Parmesan until melted.

Notes

For the best flavor, allow sausage and veggies to brown properly. Refrigerate leftovers in an airtight container for up to three days, or freeze for up to three months.
