  • 1 pound Chicken, beef, or tofu Choose your favorite protein
  • 2 cups Bell peppers Chopped, any color
  • 2 medium Carrots Chopped
  • 1 medium Onion Chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • ¼ cup Parsley Freshly chopped
  • ¼ cup Cilantro Freshly chopped
  • 4 cups Vegetable broth
  • 2 tablespoons Soy sauce

Preparation

  • Chop your protein and veggies into bite-sized pieces.
  • Heat oil in a skillet over medium-high heat.
  • Add your choice of protein to the pan. Sear untouched for 4-5 minutes until golden brown.
  • Add the chopped veggies to the pan and cook for about 5 minutes until they soften.
  • Season the mixture with cumin, paprika, and garlic powder.
  • Pour in vegetable broth and soy sauce, stir, and bring to a gentle simmer for 10-15 minutes.
  • Just before serving, stir in freshly chopped parsley and cilantro.

Notes

This dish can be easily customized based on your selected protein and available vegetables. It also freezes well—store in airtight containers for up to 2 months. Reheat with a splash of broth to restore consistency.
