Preparation

  • In a medium saucepan, combine the butter, water, and sugar over medium heat. Stir gently until everything is melted and combined.
  • Once it’s bubbling, remove it from heat. Stir in the flour, baking powder, cinnamon, and salt until smooth.
  • Transfer the dough into a bowl and let it cool for about 10 minutes.
  • Mix in the eggs, one at a time, until the dough is glossy and slightly sticky.

Cooking

  • In a deep skillet, heat oil to 350°F (175°C).
  • Using a piping bag or a zip-top bag with a snipped corner, pipe 4-6 inch strips of dough directly into the hot oil. Fry for about 2-3 minutes on each side until golden brown.
  • Remove the churros from the oil with a slotted spoon and drain on paper towels.
  • While still warm, roll them in a mix of cinnamon and sugar.

Serving

  • Melt dark chocolate in a small pot or microwave for dipping.

Notes

Allowing the dough to cool is crucial. Experiment with spices like cayenne pepper for a spicy kick. Maintain oil temperature for crispy churros. Serve warm with additional toppings like caramel or sea salt.
