Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced chicken and cook until no longer pink, about 5-7 minutes, stirring occasionally.

  • Add zucchini, bell pepper, and onion to the skillet; stir everything together.

Notes

Feel free to add other veggies like carrots or snap peas. For added flavor, consider a splash of rice vinegar or ginger. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
