  • 1 lb boneless, skinless chicken breasts Use good quality chicken or rotisserie chicken as a substitute.
  • 1 tbsp olive oil Use extra virgin olive oil for better flavor.
  • 1 tsp kosher salt Essential for seasoning.
  • 0.5 tsp black pepper Freshly ground is best for flavor.
  • 4 cups romaine lettuce Tear by hand for a rustic look.
  • 0.33 cup shaved Parmesan cheese Grated can be used if shaved isn't available.
  • 1 cup rustic croutons Optional: use homemade croutons.
  • 0.5 cup creamy white Caesar dressing Use fresh or jarred, aiming for fewer additives.
  • 4 large soft white flour tortillas Whole wheat or spinach tortillas can add a twist.

Preparation

  • Pat the chicken dry with paper towels and rub with olive oil, salt, and pepper.
  • Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes until golden brown. Flip and cook for another 5-6 minutes until fully cooked to 165°F. Let it rest before slicing thinly.
  • In a large bowl, combine the romaine, Parmesan, and croutons. Drizzle with Caesar dressing and toss gently.

Assembly

  • Lay a tortilla flat and add some sliced chicken and salad mixture down the center.
  • Roll the tortilla tightly away from you, folding in the sides to keep everything in.
  • Optionally, toast the wrap seam-side down in the skillet for 1-2 minutes until crispy and golden.
  • Cut the wrap on a bias to serve.

Notes

Serve with extra croutons and a small bowl of Caesar dressing for dipping. Pair with fresh fruit or crunchy veggie sticks. Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet for best results.
