For the Alfredo Sauce

  • 4 tablespoons Butter Coconut oil can be used for a healthier alternative.
  • cups Heavy Cream Use plant-based cream for a lower calorie version.
  • ½ teaspoon Salt Used in the sauce.
  • ¼ teaspoon Pepper Essential seasoning for the sauce.
  • 2 cups Freshly Grated Parmesan Cheese For the creamy finish.
  • 5 ounces Baby Spinach Adds color and nutrition.
  • 1 tablespoon Fresh Parsley, for garnish Adds a fresh touch.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine breadcrumbs and milk. Let it soak for 5 minutes.
  • In a large bowl, mix soaked breadcrumbs with onion, garlic, parsley, sun-dried tomatoes, ground chicken, ricotta, egg, grated parmesan, Italian seasoning, and salt until combined.
  • Form golf ball-sized meatballs and place on a lined baking sheet.
  • Sprinkle chopped bacon over the meatballs.

Cooking

  • Bake for 25-30 minutes until golden brown.
  • Meanwhile, melt butter in a skillet over medium heat. Add heavy cream, salt, and pepper, stirring until smooth.
  • Gradually fold in freshly grated parmesan until creamy.
  • Add baby spinach just before serving, allowing it to wilt slightly.

Serving

  • Plate meatballs, pour creamy spinach Alfredo sauce over, and garnish with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. For reheating, use the microwave or a stovetop pan. For freezing, store individual meatballs in a freezer-safe container for up to 3 months.
